We freeze (and then thaw) our tofu first - it gives it a better texture (in our opinion). (Not for silken tofu! :-) And the high-protein version at Trader Joe's is worth the extra $.
Note though that freezing your tofu will create voids. It makes tofu spongey and rough. Doing so before tearing and frying will make it more resemble meat in mechanic, but that shan’t be the goal in general.
